Mediterranean Tri-Color Cheese Tortellini Salad
INGREDIENTS
- 18 pieces Tri-Color Cheese Tortellini
- 4 cherry tomato, halved
- 3 kalamata olives, halved
- 1 Asparagus spear, blanched and cut in 1 ½’’ pieces
- 0.25 oz. red onion, thinly sliced
- 3 tbsp Greek vinaigrette
- 0.5 oz. crumbled feta cheese
METHOD
Boil the Tri-color Cheese Tortellini for 4 minutes then chill. In a bowl, combine the tomatoes, olives, asparagus and red onion. Add the cooked tortellini to the bowl and toss with the Greek vinaigrette. Garnish with the crumbled feta cheese. Buon Appetito!
