Southwestern salad with Cheese Tortelloni croutons and cilantro lime vinaigrette
INGREDIENTS
- 7 pieces Cheese Tortelloni
- Extra virgin olive oil
- Lime
- Cilantro
- 4 oz. Romaine lettuce
- 1 tbsp corn
- 2 tbsp avocado, sliced
- 1 tbsp black beans
- 1 tbsp tomato, diced
METHOD
Prepare a cilantro-lime vinaigrette. Fry the ravioli in sunflower oil at 350° for about 2 minutes or until golden brown. Toss the lettuce with the vinaigrette. Add the corn, avocado and black beans and tomato. Garnish with the Cheese Tortelloni croutons. Buon Appetito!
